Here is the abstract of this excellent article:<\/p>\n<p>Mexican cuisine, recognized by UNESCO as an Intangible Cultural Heritage of Humanity, constitutes a living and geographically diverse culinary system that, when projected internationally, faces risks of trivialization. This article analyzes the extent to which the offerings of Mexican restaurants in Barcelona act as authentic cultural ambassadors or reproduce processes of gastronomic cultural trivialization. A sequential mixed-methods design is applied in two phases: analysis of menus from 79 Mexican restaurants in Barcelona, and expert judgment through a modified focus group with ten professionals in Mexican gastronomy. The quantitative phase describes the presence of heritage dishes, drinks, and desserts; the qualitative phase establishes their relative importance according to criteria of authenticity and representativeness. The results reveal a marked misalignment between the available offerings and the preparations considered most significant by the experts, as well as a tendency to favor standardized options over preparations with greater heritage value. It is concluded that the analyzed offer prioritizes commercial adaptation over cultural integrity, generating an unsystematic gap between menu presence and heritage importance, and highlighting tensions between economic promotion, gastronomic authenticity and preservation of Mexican culinary heritage in urban tourist contexts.<\/p>\n<p>&nbsp;<\/p>\n<p>Cite: Lazovski, O.; Berbel, G. &amp; Paramo, R.
